This is a smooth, airy frosting. It develops a delightful crust after a day or so. The three yolks can be used in place of one of the eggs in egg 1234 cake.
You’ll need
- 3 egg whites
- 1 1/2 cups sugar
- 1/4 tsp cream of tarter
- 1/3 cup cold water
- 1 dash salt
- 1 tsp vanilla
Prep
- Set the water to boil in the bottom of your double boiler.
- Place all ingredients except vanilla into top of double boiler
- Beat 30 seconds
- Put top of double boiler over the boiling water
- cook, beating, until stiff peaks form, about 7 mins
- remove from heat
- add vanilla
- beat until spreading consistency, another minute or so
